Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the rainbow peppers into thin strips and roughly chop the salami.
  3. In a skillet, sauté the peppers with a splash of olive oil until tender-crisp, about 5 minutes.
  4. Arrange the flatbreads on a baking sheet. Lightly brush with olive oil.
  5. Top each flatbread with a generous layer of shredded cheese, followed by the sautéed peppers and salami slices.
  6. Bake for 8-10 minutes until the edges are golden brown and the cheese is bubbly.
  7. Slice and serve immediately.
