Instructions

  1. Cook rice according to package directions.
  2. While rice is cooking, prepare the vegetables. Thinly slice the onion and bell peppers. Mince the garlic. Juice one lemon and cut the other into wedges for serving.
  3. Pat the squid rings dry with a paper towel. This helps them sear instead of steam.
  4. Heat olive oil in a large skillet or wok over high heat. Add the sliced onion and bell peppers and stir-fry for 2-3 minutes until they start to soften but are still crisp.
  5. Add the minced garlic and red pepper flakes and cook for another 30 seconds until fragrant.
  6. Add the squid rings to the skillet. Cook for 1-2 minutes, stirring constantly, until they are opaque and just cooked through. Be careful not to overcook, as squid can become rubbery.
  7. Remove the skillet from the heat. Stir in the soy sauce and fresh lemon juice.
  8. Serve the stir-fry immediately over the hot cooked rice, garnished with fresh parsley and a lemon wedge on the side.
