Instructions

  1. Preheat your oven and bake the french fries according to the package instructions until golden and crispy.
  2. While the fries are baking, prepare the toppings. For the relish, finely dice the tomatoes, cucumber, and half of the onion. Combine in a bowl with the juice of half a lemon, and a pinch of salt and pepper. Set aside.
  3. For the kofta, grate the other half of the onion into a large bowl. Add the lean ground beef, dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix gently with your hands until just combined (do not overwork).
  4. Roll the beef mixture into small, 1-inch meatballs. Heat olive oil in a large skillet over medium-high heat. Add the kofta and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
  5. For the sauce, mix the plain yogurt, minced garlic, and the juice of the remaining half lemon in a small bowl. Season with a pinch of salt.
  6. To assemble, divide the crispy fries among four plates or serve family-style on a large platter. Top with the beef kofta, spoon over the fresh relish, sprinkle generously with the crumbled goat cheese feta, and finish with a drizzle of the lemon-yogurt sauce.
